Healthy Hummus Board

 

Serves 6 (as a starter)

 

Ingredients:
  • 2 cups homemade or store-bought hummus

  • 1 Lebanese cucumber, finely diced

  • 1/2 cup cherry tomatoes, chopped

  • 2 tablespoons marinated red pepper strips

  • 3 radishes, finely chopped

  • 3 spring onions, finely sliced

  • 2 tablespoons kalamata olives, chopped

  • 2 tablespoons dill

  • Fresh lemon juice squeezed over the top

  • Sea salt & cracked black pepper

Method:
  1. Spread the hummus out across your board (you may need to use more if using a big board).

  2. Sprinkle over all your chopped vegetables on top of the hummus. Season well with sea salt and pepper. Squeeze over some fresh lemon juice.

  3. Serve with a toasted baguette, crackers, lavosh – whatever you like!!!!
